Chinese Almond Cookies:


  • 1 cup butter, room temperature
  • 1 ½ cup sugar
  • 1 egg + 1 egg yolk (save white for egg wash)
  • 2 tsp almond extract
  • 3 cups flour
  • 1 tsp baking soda
  • ½ tsp salt


Cream butter and sugar in stand mixer.
Cream butter and sugar in stand mixer.
Add almond extract and mix until blended.
Sift flour and baking soda over wet ingredients, add salt and mix until just blended. It will be crumbly.
Scrape all ingredients together with rubber spatula to eliminate dry spots
Dump mixed ingredients onto plastic wrap and shape into a square.
Wrap tightly with plastic and refrigerate 2 hours.

When ready to bake, preheat oven to 325F.
Remove dough from refrigerator and cut into 1 inch squares.
Roll squares into balls and place on parchment lined baking sheet 1 ½-2 inches apart. Flatten slightly.
Brush with egg wash (1 egg + reserved egg white).
Dot with red gel food coloring or top with almond.
Bake 30-35 minutes or until golden.
