SUPERBOWL SNACK IDEAS
The Patriots may not be in the Superbowl this year, but that doesn’t mean we can’t watch the game and eat delicious food! Here are some recipe ideas for game day.
ROAST BEEF SLIDERS:
- slider rolls - I like the sweet hawaiian style
- roast beef (deli is fine, but feel free to roast your own)
- cheese of choice, I like colby jack
- caramelized onions
- horseradish mayo (1/4 cup horseradish sauce, 1/4 cup mayo, 1 tsp worcestershire sauce)
Slice rolls as a single sheet. Layer beef, cheese & onions on the rolls; spread horseradish mayo on top side of rolls, and place on sandwiches. Brush with melted butter (or the butter oil mixture left from caramelizing the onions). Bake in 350 oven for 15 minutes. Serve right away or at room temperature.
Onion Dip:
- approx 3 cups sliced onions (2 large onions)
- 1/4 cup vegetable oil
- 1/4 cup butter
- 1 tsp salt
- 1 tsp pepper
- 1/4 tsp cayenne pepper
- 4 oz cream cheese (room temp)
- 1/2 cup sour cream
- 1/2 cup mayo
melt butter and vegetable oil in heavy skillet; add onions, cayenne, salt & pepper. Cook over medium- high heat until onions soften and start to brown. Turn down to medium-low heat and cook another 20 minutes or so, until onions are caramel colored. Remove onions from heat and allow to cool. Add cooled onions to bowl of stand mixer and add cream cheese, sour cream & mayo, Beat on medium speed until well blended. Serve immediately or refrigerate and bring to room temp before serving.
Cake Mix Whoopie Pies:
Cakes:
- 1 box cake mix, any flavor
- 1 pkg instant pudding (4 serving size), same flavor as cake
- 3 eggs.
- 3/4 cup water
- 1/2 cup vegetable oil
Mix all ingredients in bowl of stand mixer on low speed until blended. Continue beating on high speed for about 5 minutes, or until fluffy. Scoop onto parchment lined baking sheets leaving 1-inch between each scoop. Bake in 350 oven for 10-12 minutes, or until set. Cool on cookie sheets for about 2 minutes. Remove from cookie sheets and allow to fully cool on a rack before filling.
Filling:
- 1 stick butter, softened
- 2 cups Marshmallow Fluff (not marshmallow creme)
- 1 1/4 cup powdered sugar
- 1 tsp vanilla extract
Mix all ingredients in stand mixer (paddle attachment) until fluffy. Pipe or scoop onto center of flat side of cooled cake and top with another cake. Store in an airtight container up to one week.
